Gluten Free Breakfast Wrap Recipe

I have recently converted from intermittent fasting to intuitive fasting. Instead of watching the clock and pacing about waiting for the “correct” time to eat, I will eat depending on my fuel need for the day, which will vary depending on sleep, hormones, stress and activity in addition to what foods consumed recently. As a person who processes lots of data, I’m constantly thinking, reading, analyzing, experimenting, clarifying, tossing out old data and seeking new info. Change is good. This wrap is a quick, nourishing meal that tastes great anytime. I like to start my day with something savory so I don’t crave sweets as much. This pairs well with coffee with cinnamon, to improve glucose metabolism.
Wrap/Tortilla
- 1.5 cups Otto’s Cassava Flour
- 1/4 Cup Olive Oil
- 1 Cup water
Mix together in a bowl until just combined. Press thinly into a skillet until flat and even. (I use either a glove or a parchment round). Cook until golden and then flip and cook other side.
Filling:
- 3 eggs cooked to your liking.
- Ninja Squirrel, Sriracha Hot Sauce. This is my favorite. It has coconut cream which balances the heat nicely.
- Arugula.
- Goat cheese. I used the honey goat from Trader Joe’s.
