This quick Mediterranean pasta bowl is bursting with flavor, packed with fiber and polyphenols, and so satisfying you’ll feel like you’re indulging—while actually nourishing your body! It’s a nourishing meal on its own and also serves as a base for any protein addition. Toss it together quickly with ingredients you have on hand.
Artichoke hearts are low glycemic and high in fiber. Olives and olive oil are rich in polyphenols and healthy fats, to soothe your gut microbiome. I used a red lentil pasta from Trader Joe’s for more fiber and nutrient density. This dinner bowl is bright and gluten free, vegan friendly with a dairy free option. It pairs well with any protein. I recommend prawns. You will notice that the recipe has less pasta volume compared to the artichokes and olives. This is for satiety while minimizing glycemic load. If you are feeling super hungry feel free to add more artichokes and olives. 🙂
Quick Mediterranean Pasta Recipe
Ingredients:
- Pasta of choice-1 cup
- Artichoke hearts 1 can/jar
- Kalamata olives 1 jar
- 4 T Olive Oil, plus extra for drizzling – I use Kasandrinos
- 1 tiny garlic clove
- Pomi Tomatoes Strained Italian (1 box)
- Salt & pepper to taste
- Garnish Rosemary sprig or other herb of choice
- Grated Parmesan and
- Protein if desired (saute separately and toss in at the end)
Directions:
- Boil water and cook your pasta of choice.
- While you’re waiting for the water to boil, place 1 T olive oil in a wok or large skillet, heat and add crushed garlic and cook for 30 seconds or less but don’t let the garlic brown.
- Turn heat down to medium-low.
- Add the strained tomatoes, artichoke hearts, Kalamata olives and simmer for about 3 minutes until tomatoes are slightly thickened and deepened in color.
- Toss in cooked pasta well so it absorbs the sauce.
- Add the remaining olive oil.
- Salt and pepper to your taste.
- Simmer 1-3 minutes to integrate flavor profile.
- Drizzle with extra olive oil and serve with garnish, Parmesan or protein choice if desired.
